近年来，国家食品安全风险评估中心研究员，中国工程院院士陈君石曾在不同的场合强调：食源性疾病是头号食品安全问题。他在一篇博文《谁是食品安全的头号大敌》中曾指出：相比于国人最关注的添加剂、防腐剂，食品中毒才是对食品安全的最大威胁。事实确实如此吗？根据公开数据显示，我国卫生部每年收到食物中毒爆发报告为600 -800起，发病2-3万例，死亡百余例。看起来很少，似乎不值得重视，但是当你再看一下世界卫生组织的这项数统计，即“发达国家食源性疾病的漏报率在90%以上，而发展中国家则在95%以上”，相信你应该不会感觉很轻松了！！！
